Things You'll Need

  • 1 cup gluten-free all-purpose baking mix
  • 1 egg
  • 1/2 cup water
  • 1/8 cup canola oil
  • 1 tablespoon honey
  • Waffle iron
  • 1 pint fresh or frozen strawberries
  • 1/3 cup sugar
  • 1 banana
  • Maple syrup

Instructions

      Beat the egg, water, canola oil and honey together in a bowl.

      Add the baking mix to the liquid ingredients and beat or whisk until well-blended.

      Pour onto a hot waffle iron and bake until the steaming stops and the waffle is golden brown.

      Cut up the strawberries, put them in a saucepan and add the sugar.

      Cook on a medium-high heat for five minutes, stirring occasionally.

      Assemble the waffles with the strawberry topping, sliced bananas and maple syrup. You can substitute the strawberries and bananas with your favorite toppings.
