How to Make Ginger Sweet Potato Waffles

These ginger sweet potato waffles are amazing! If you are not into ginger omit the ginger, and add coconut and cinnamon to sweeten them up a bit. I make these at Ricochet where I am a chef, and people fall in love with me each time I make them!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/2 cup of boiled sweet potatoes
  • 3 eggs beaten
  • 1 1/2 cups milk or soy milk
  • 2 tbsp melted butter
  • 1 cup sifted all-purpose flour (or 1 cup minus 2 tbsp of brown rice flour for gluten free)
  • 1/2 tsp sea salt
  • 2 tsp aluminum-free baking powder
  • 2 tbsp agave nectar or maple syrup
  • 2 tsp minced ginger (or more according to taste)
  1. Step 1

    Boil sweet potatoes and cook until tender. Peel and mash. Mix in wet ingredients. Sift dry ingredients together and mix in with rest of the batter and stir enough to combine all ingredients. Do not over mix! Don't forget to smile as you mix! Love is an important ingredient! You can taste the love!

  2. Step 2

    Heat waffle iron. Add batter and cook until done...waffle should be browned. Some waffle irons have a light indicator or a sound to let you know when the iron is ready. Usually no spray is needed if the iron is non-stick. Make a small one to sample and test the batter as well as the iron. Taste the sample and adjust the seasoning according to your taste. Add more ginger or maple syrup depending on your palate.

  3. Step 3

    Serve the ginger sweet potato waffles hot with a dusting of powdered sugar, butter, and/or maple syrup if desired. These waffles are so delicious on their own as well.

    Gluten-Free Variation: Use Brown Rice Flour
    Vegan: Omit Eggs and butter and add 1/2 cup of Olive Oil or Coconut Oil
    and use soy or hemp milk instead of milk
