Step 1
Tarragon does best from plant or cuttings. You can also grow tarragon as a pot herb in a window sill garden. You can harvest in the fall but do so in the mornings before the sun comes up to preserve roots. You can hang dry or lay out on screen in a dark dry place. You can also dry in the oven on a low temperature. Strip leaves and keep in jars for use. You can also make a tarragon vinegar by bruising fresh sprigs and placing warmed vinegar, preferable white wine or malt vinegar. Let it set for about 6 weeks before using. Fresh tarragon leaves can be kept in the fridge in a zip lock with a damp paper towel.

Tarragon is excellent to flavor salads, fish, poultry, sauces, green beans and carrots. It has a spicy hot flavor and smells like anise. It has a very strong flavor so use sparring. The leaves and tops of the plant are generally used.

Herbs and spice sure are nice!Chicken Tarragon Recipe
Salt a cut up chicken and brown in 1/2 cup o butter in a heavy skillet. Remove from pan. Blend 2tbsp. flour and add 2 cups of purchased chicken stock. Add 1/2 cup finely chopped onion, 1 tsp dried tarragon leaves, sprinkle of white pepper and 1/4 tsp garlic powder. Return chicken to pot and simmer for 25 minutes. Remove chicken to platter. Add 3/4 cup sour cream and stir until warm. Adjust salt and pepper and use as a gravy for your chicken. Yummy!
