How to Make Poached Pears With Chocolate Mascarpone Sauce

Things You'll Need

  • 6 ripe pears
  • 7 tbsp. caster sugar
  • 1 1/2 cinnamon sticks
  • Rind of 3/4 orange
  • 2 cloves
  • 1 bottle rose wine
  • 8 oz. dark chocolate
  • 1 1/4 cup mascarpone cheese
  • 3 tbsp. triple sec (orange-flavored liqueur)

Instructions

      Using a small sharp knife, carefully peel the pears. Leave the stem intact and be careful to not slice into the fruit.

      Place the sugar, cinnamon sticks, orange rind, cloves and wine in a large saucepan. Heat on low until the sugar has dissolved.

      Add the pears and simmer covered for 20 minutes. Leave the pears in the warm liquid while preparing the chocolate sauce.

      Melt the chocolate in a small saucepan. Beat the cheese and the triple sec in a small mixing bowl. Add the cheese and triple sec mixture to the chocolate.

      Place the pears on individual serving plates. Spoon the sauce on the side of the plate, or drizzle over the poached pear with the tines of a fork. Serve warm.
