Step 1
broccoliIngredients for Broccoli and Stilton Cheese Soup:
1 large onion, diced
1 large or two medium leeks, finely sliced
2 tablespoons of butter
4 bunches of fresh broccoli heads, chopped up
3 cups of chicken stock
1 teaspoon of white pepper
1 teaspoon of garlic powder
1 ½ cups of evaporated milk
4 oz Stilton, crumbled
Ingredients for Roux:
1/4 cup of butter
1/4 cup of flour -
Step 2
saute onion and leeksPlace butter in a stockpot and add onion and leeks. Cook on medium heat until just tender but not browned.

Add the broccoli, garlic powder, white pepper and stock to the stockpot and cook at a low boil until the broccoli is just tender. Take off of heat and allow to cool.

Step 4
food processorUsing a food processor, blend the broccoli mixture until it is fairly smooth, returning the soup mixture to the stockpot. Put the soup on a low heat.

Step 5
rouxYou will need to make a roux as a thickener for the soup. In a heavy 2-quart saucepan stir together flour and butter together until its smooth. Cook over medium-high heat for about 4 minutes, whisking constantly until the flour loses its raw smell and begins to develop a toasty aroma. Now remove the roux off the heat.

Step 6
Slowly add about 1 or 2 cups of the soup to the roux mixture making certain to whisk constantly. Now add the roux/soup mixture to the soup in the stockpot and cook the soup on a low heat until the soup thickens. Make certain the soup does not burn by stirring the soup.

Step 7
stilton cheeseAdd the milk and the stilton cheese into the food processor and blend.

Step 8
broccoli & Stilton Cheese SoupAfter the soup has thickened add the milk and stilton cheese mixture, and pepper to the stockpot and continue cooking on a low heat for about 5 minutes. DO NOT BOIL and make certain you stir the soup so that it doesn’t scorch. Add salt to your taste, but no more then 1/2 a teaspoon. enjoy
