How to Make Cinnamon Raisin English Muffins
Hot from the toaster and kissed with butter, there are few things better for breakfast than hot cinnamon raisin English muffin. You don't have to buy them at the store, either; this favorite morning treat is easily created at home. All you need are a few supplies and a little time and, before you know it, you'll be enjoying terrific English muffins. Does this Spark an idea?
Things You'll Need
- 1/3 cup water, approximately 110 F
- 1 tbsp. sugar
- 2 1/2 tsp. active dry yeast
- 1 cup skim milk, between 100 and 110 F
- 3/4 tsp. salt
- 2 tsp. ground cinnamon
- 2 cups flour
- 1/3 cup raisins
- Kitchen thermometer
- Measuring cups
- Measuring spoons
- Large bowl
- Medium bowl
- Whisk
- Wooden spoon
- Griddle or large nonstick frying pan
- Spatula
- Cooling rack

Combine the water, sugar and yeast in a large bowl and let sit for 10 minutes. The mixture should be foamy; if not, the yeast may be bad and the batter won't rise.

Stir in remaining ingredients, except the raisins, using the wooden spoon. Once the batter has come together and is smooth, stir in the raisins.

Cover the dough with plastic wrap and let rise at room temperature (70 to 75 degrees) for 45 minutes.

Lightly grease the griddle or pan with cooking spray and heat over medium to medium-high heat. Drop 1/4 cups of dough onto the pan--the dough will be sticky--and cook the dough until golden brown on the bottom. Flip the muffin over and cook the opposite side until it's golden brown.

Cool cooked muffins on a wire rack for 15 minutes or more. Split muffins with a fork and toast before eating.

Tips & Warnings
This recipe yields 10 muffins. Leave out the cinnamon and raisins for plain English muffins. Skim milk creates more nooks and crannies. Milk with fat in it will result in muffins with a tighter crumb.
Each griddle and range heats differently. If the griddle is too cool, the muffins may dry out; if it's too hot, the muffins can burn. You'll want the English muffins to brown on one side within a few minutes.
