Things You'll Need:
- 115g of butter or margarine, at room temperature
- 70g caster sugar
- 30g dark brown sugar
- 2 eggs, at room temperature
- 215g plain flour
- 1 tsp baking powder
- 125ml milk
- 170g chocolate chips

Step 1
Preheat the oven to 375 F/190 C. Grease a 10 cup muffin pan or use paper cases. With an electric mixer, cream the butter until soft. Add both sugars and beat in until light and fluffy. Beat in the eggs, one at a time.

Sift together the flour and baking powder, twice. Fold into the butter mixture, and alternate with the milk.

Divide half the mixture between the muffin cups, sprinkle some chocolate chips on top, then cover with a spoonful of batter. This will get you a chocolaty mouthful on top and in the middle! To ensure even baking, half-fill any empty muffin cup with water.

Bake until lightly covered, about 25 minutes. Let stand about 5 minutes before turning out. And there you have it, a simple and easy way to make your family happy and yourself!
