How to make Vegetarian Pasta e Fagioli

This recipe is an easy vegetarian dish. -Pasta-e-Fagioli is delicious soup of beans, tomatoes, and vegetables. Most Pasta-e Fagioli recipes call for chicken broth this one does not. I can also be made in a slow cooker on medium heat. You just need to saute your vegetables first before you put them in you cooker.

Instructions

Things You'll Need:

  • 3 tablespoons of olive oil
  • 3 cloves of garlic (chopped)
  • 1 medium onion (diced)
  • 3 stalk of celery (opitional sliced)
  • 16 oz of white cannolini beans
  • 1lb. 12oz can of diced tomatoes
  • 1 cup of water
  • 14.5 oz can of tomato sauce
  • salt, pepper, parsley and basil
  • 8 oz box of ditalini pasta
  1. Step 1

    In a soup pan, heat on medium heat 3 tablespoons of olive oil.
    Add in diced onions, sliced celery. Sauté until celery is translucent and light golden in color. Then add in chopped garlic and continue to sauteeing for about 2 minutes.

  2. Step 2

    Add in cannelloni beans, diced tomatoes, and 1 cup of water. Stir. Then add tomato sauce. Stir. Add in salt,pepper,parsley,and basil (parsley and basil can be fresh or dry). Stir everything again. Bring to a boil then let it simmer for 45 minutes.

  3. Step 3

    While the soup is simmering, cook pasta. Add pasta after soup is finished simmering. Stir and ready to serve. Enjoy!
