Step 1
Omelet’s can make a delicious meal and they are every easy and inexpensive to make. I have a few recipes for some fabulous omelets that I would like to share with you. You will need 1 dozen eggs, 1-2 peeled and diced baking potatoes, 2 tablespoons butter (per omelet). 1 cup sliced mushrooms, ½ cup cream and ½ cup of shredded Monterey jack cheese.

First, you will need to place 12 eggs in blender and add ½ cup cream, add teaspoon salt, and black pepper, mix all ingredients for no more than 25 seconds. In large fry pan place butter on medium heat, when butter begins to melt pour egg mixture (divide mixture equivalent to 3 eggs per omelet). Make sure you shake pan from side to side. The omelet should begin to separate from the sides of fry pan and settle in the middle.

Step 3
Next, you want to pre cook the diced potatoes (either boil them or bake them in the oven), add potatoes, about ¼ mushrooms per omelet, 2 tablespoons cheese. When omelet is centered in middle. Fold omelet so that the filling is centered and serve.
