How to Make Brown Sugar Muffins with Chocolate Chips

This is a delicious chocolate chip muffin recipe that uses brown sugar and tastes like chocolate chip cookies.

Instructions

Things You'll Need:

  • 1 egg
  • 1/2 cup milk
  • 1/3 cup margarine/butter
  • 2 cups flour
  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp instant coffee
  • 1 tsp vanilla
  • 1 cup milk chocolate chips
  1. Step 1

    Preheat the oven to 400 degrees. Grease muffin tin or use cupcake papers to line the pan. Check your cupboard or pantry for fresh baking powder before you begin.

  2. Step 2

    Mix egg, sugar and butter together until butter or margarine is not lumpy and well mixed with the sugar and egg.

  3. Step 3

    Add milk and mix. Then, in the same bowl, add the flour baking powder, istant coffee, vanilla extract. If the instant coffee is lumpy instead of fine use a spoon or mortar and pestle to break it up. Add the chocolate chips last.

  4. Step 4

    Do not over mix muffin batter, the batter is good when it is still lumpy.

  5. Step 5

    Pour into muffin tin and bake for 20-25 minutes. The muffins are done when a toothpick stuck into the muffin can come out clean. Should be springy to the touch.

Tips & Warnings
  • My kids like it with a streusel top. You can make it by adding 1/4 cup brown sugar, 1/4 cup white sugar, 1 tbsp butter and 2-3 tbsp flour. Sprinkle on top before you bake.
