This Grilled Chicken Penne Al Fresco is low in fat and tastes great. Your family will love this recipe.

Instructions

Things You'll Need:

  • 4 cloves of garlic, peeled
  • 2 cups of grape or cherry tomatoes
  • 3 cups of mezze penne pasta
  • 3 cups chicken broth
  • 3/4 cup of white wine such as Chardonnay
  • 1 1/4 cups lightly packed fresh basil leaves
  • 1 oz. Parmesan cheese, grated
  • 2 cups of grilled diced chicken breast
  • Salt and pepper to taste
  1. Step 1

    You will need a deep baking dish to make Grilled Chicken Penne Al Fresco. Spray your deep dish with a non-stick spray.

  2. Step 2

    Slice garlic and add your tomatoes to a microwave safe baking dish and cover. Microwave on high for 4-5 minutes or until the tomatoes start to burst. Stir after 2 minutes.

  3. Step 3

    Crush your tomatoes and add pasta, broth, wine, salt and pepper (to taste).

  4. Step 4

    Return the baking dish to the microwave, cover and microwave on high 16-18 minutes or until pasta is tender, stirring after 10 minutes.

  5. Step 5

    While pasta cooks, coarsely chop your basil. Grate your Parmesan cheese.

  6. Step 6

    Remove your baking dish carefully from the microwave. Lifting away from you, remove the lid.

  7. Step 7

    Add basil, reserving some for garnish. Add cheese and chicken to the microwaveable container. Mix well.

  8. Step 8

    Garnish with reserved basil and additional Parmesan cheese. Serve with garlic bread or dinner rolls.
