Cook Plantains that resemble bananas in shape and size but are green instead of yellow. They are not as soft or sweet as the banana fruit look-a-like. Unlike a banana that is usually peeled and eaten raw, plantains usually require being cooked or fried. They can be served as a side to a meat or poultry dish, as an appetizer or dessert.

Instructions

Things You'll Need:

  • 2 Fully ripe plantains 1 cup Enriched Flour 1 TBS sugar 1/4 black sesame seeds 1/8 tsp Baking soda 1/4 cup Water small pinch of Salt Oil
  1. Step 1

    Buy your plantains at the produce department of any supermarket or in an outdoor fruit market. Cook and eat plantains by first peeling the outer skin and cut the plantains diagonally and evenly into one inch slices or in quarters according to taste and look desired. They should not retain the round banana look but be slightly flat.

  2. Step 2

    Mix all the dry ingredients together and slowly add water to it. Stir slowly to remove all lumps that might occur. The batter should be a good texture - not too watery and not too thick. If it becomes too watery add a little more flour. If the plantains becomes too thick to cook add a little more water.

  3. Step 3

    Cook and eat plantains by first adding the oil to a frying pan and heat until it starts sizzling. Take the cut up pieces of the plantain and add them to the hot oil. Deep fry them until they are a golden brown. Turn the heat down if the oil starts to sizzle too much or begins to spit oil out of the pan.

    Continue to cook and then eat plantains by first removing the plantains when they turn a deeper golden color and have a crisp outer covering. Turn off the stove. Use a spatula to remove the fried plantains and drain them on two layers of paper towels. Allow them to cool, place them on a serving platter and enjoy as an appetizer or dessert or a side dish for lunch or dinner.

Tips & Warnings
  • Do not fry them until they are too crisp dried out. You do not want them to become plantain chips. They should be soft inside and sweet to taste.
  • Serve with a side of ice-cream for a delicious dessert.
