This is a recipe for barbequed brisket the leftovers from which should make an excellent sandwich.

A brisket is a cut of meat that is generally sold as a boneless cut and comes from under the first five ribs in the breast section of the cow. A full-size Beef Brisket which may weigh from 8-12 pounds is cut into two halves known as the Point Cut or the Flat Cut. The Flat Cut is leaner than the Point Cut and is sold as a brisket. While the Flat Cut is the leaner of the two, it generally has a full layer of fat running across the surface of the cut which helps the meat to remain moist.

Since a brisket is typically a tougher cut of meat, it’s ideally suited for slow cooking, which allows the meat to cook for a longer period of time while bringing out the flavor.

Difficulty: Moderately Easy
