Sometimes it's hard to find healthy meals for kids that they will actually eat. Here's a few quick and easy and healthy meals that both parents and kids can agree on.

Difficulty: Easy
Instructions
  1. Step 1

    Cheesey Quesadillas

This healthy meal is very simple. All you need is tortillas, cheese and anything else you wish to add to the quesadilla. You can add things like tomatoes, green peppers or even jalapenos if your kids like spicy foods. Sprinkle the cheese evenly over one tortilla, add your secondary toppings and then cover with a second tortilla. Put this in the microwave for one minute. Yank it out, cut it with a pizza cutter and serve it up.

  2. Step 2

    Pizza Pockets

Stir together 1/4 cup chopped pepperoni, 1/4 cup shredded mozzarella cheese and 2 tablespoons of spaghetti sauce. Take a knife and cut open one side of a 6-inch pita pocket. Stuff the pita pocket with the sauce mixture and press it closed. Put this in the oven and bake at 400 degrees Fahrenheit for 15 minutes or so. Unwrap and serve.

  3. Step 3

    Egg Boat Supreme

Butter both sides of a single slice of bread. Cut a hole in the center of the bread. Heat up a frying pan and then put the bread into the heated pan. Let this brown for a minute, then flip it over and brown the other side for a minute. Crack open the egg into the hole in the bread, then cook this for two minutes.

on 9/21/2009 I love the quesadilla idea because you can make some kid-friendly ones and then add some other stuff - onions, peppers, mushrooms, etc. - for the grownups. Thanks for the idea! 5*

on 9/7/2009 Really good ideas. Especially the pizza pockets. What kid doesn't like those.
