This quick and easy Golden Oyster stew will take no time to make after a long day at work and is perfect as leftovers for a weekend lunch. The heartiness of this stew gives the feel of being cooked all day but really only too moments to prepare.

Instructions

Things You'll Need:

  • 15 ounces oyster, undrained
  • ½ cup onion, chopped
  • ½ cup celery, sliced
  • 2 cups fresh mushrooms, sliced
  • 1 can cream of potato soup
  • 1 small jar pimentos, diced
  • ¼ cup butter or margarine
  • ¼ cup all purpose flour
  • 1 ½ cups sharp cheddar cheese, grated
  • 2 cups milk
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon Tabasco sauce
  1. Step 1

    Search and remove any remaining shell particles from the oysters.

  2. Step 2

    In a large pot, cook onions and celery in butter over medium heat until tender and translucent.

  3. Step 3

    Add mushrooms and cook over low heat for about one minute.

  4. Step 4

    Stir in flour, salt, and pepper into vegetable mixture. Cook lightly.

  5. Step 5

    Add milk gradually and stir the mixture until thickened and there are no flour lumps.

  6. Step 6

    Add sharp cheddar cheese and stir until melted.

  7. Step 7

    Add oysters with liquid, cream of potato soup, pimentos, and Tabasco sauce.

  8. Step 8

    Cook over medium heat for 5 to 10 minutes or until oysters begin to curl.

  9. Step 9

    Serve hot with bread
