These yummy and delicious stuffed green peppers have a mexican flare! A hybrid between shepherd's pie and stuffed peppers, this recipe is super easy to make! Feed one or a whole family! Add spanish rice to complement this hearty and delicious semi-home made treat!
** Serving size = 4 stuffed peppers!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 4 large green bell peppers
  • 1 lb ground turkey or beef
  • 1/2 cup of water
  • 1 pkg of taco seasoning (1.25 oz)
  • 1 tub of refrigerated mashed potatoes (my family loves Shedd's Country Crock Mashed Potatotes or Garlic Mashed Potatoes)
  • 1/2 cup of shredded cheddar cheese
  • Cracked black pepper and salt to taste
  1. Step 1

    Start by rinsing off your bell peppers. Remove the caps of the peppers with a knife. Using a spoon, clean out the inside of the peppers. Rinse the inside of the peppers if desired.

  2. Step 2

    Place the peppers on a microwave safe plate, cut side down. Cover with entire dish with plastic wrap and place in the microwave. Microwave the peppers on HIGH for 3 minutes to 3 minutes and 30 seconds. The peppers should be crisp and tender. Keep the peppers covered and let stand.

  3. Step 3
     

    While your peppers are in the microwave cooking, heat ground beef or turkey in a non stick skillet over medium-high heat until browned. Drain the meat and return to pan. Add 1 package of taco seasoning and water as directed on seasoning package. Bring to a boil, cover, and continue to heat on medium until most of liquid is dissolved. This usually takes about 5 minutes.

  4. Step 4
     

    With your peppers cooling and your meat cooking, cook the mashed potatoes in the microwave as directed on the package instructions.

  5. Step 5
     

    Using a spoon, fill the peppers half way with ground meat and top with potatoes. Add salt and pepper to taste. Sprinkle with shredded cheddar cheese as desired.

Tips & Warnings
  • For a spicier meal, use a nacho cheese blend as an alternative to shredded cheddar or spicy taco seasoning instead of mild. Jalapeno slices can be added to the mashed potatoes for an even hotter dish!
  • For a healthier dish, use reduced fat cheese.
