How to Clean a Gar Fish
Many people view gar as a trash fish with dangerous teeth, but in fact, gars are loaded with good meat. A large gar can produce at least two thick boneless pieces of meat. You do need a cutting board to properly clean a gar.

Put on the plastic gloves. Place the top of the gar's head on the cleaning board. If the board has a spike, hit the gar's head with a hammer to secure it to the spike.

Use the snips to make a hole just behind the head of the gar. Starting from that point, cut straight down each side of the fish to the cutting board.

Use the snips again, but this time cut down the length of the fish to the tail.

Use your hands or a knife to push the hide away from the meat. Slice down the back bone and across the ribs to expose the meat.

Tips & Warnings
Some people say the gar's blood should be smeared on the meat to retain flavor.
Be careful, their teeth are razor sharp
