How to Make Luscious Summer Salad

If you have a taste for fresh fruit, this is a luscious recipe, made even more delicious by the addition of a Creamy Lime Honey Dressing. A variety of fruits can be used, but I've chosen the ones listed because their flavors seem to complement each other. Here's how to make the salad and the dressing.

Instructions

Things You'll Need:

  • 1/2 cup lime juice
  • 1/2 cup water
  • 1 large banana, sliced diagonally
  • 1 pint blueberries, divided
  • 2 large nectarines, sliced
  • 1 pint strawberries, hulled and halved
  • 1 cup watermelon balls
  • 1 cup seedless green grapes
  • 1 kiwi fruit, peeled and sliced
  • Dark sweet cherries, with stems, for garnish
  • For the dressing:
  • 1 cup sour cream
  • 1/2 cup cottage cheese
  • 1/4 cup lime juice
  • 2 Tbsps honey
  1. Step 1

    In bowl stir lime juice, water and sugar until sugar dissolves. Add sliced banana; set aside.

    In large serving bowl, preferably glass, layer strawberries, nectarines, blueberries (reserve 1/2 cup for garnish),reserved bananas, watermelon and grapes.

    Pour lime sugar syrup over fruits; cover loosely and chill for two hours.

    Meanwhile, make the Creamy Lime Honey Dressing as follows: Using a food processor, blender or mixer and a small bowl, whirl together sour cream and small curd cottage cheese until smooth. Stir in lime juice and honey. Chill.

    Garnish with stemmed cherries

    To serve, spoon an assortment of fruits and berries, with some of the syrup, into dessert bowls; top with Creamy Lime Honey Dressing. Makes 6 generous servings. Garnish with reserved 1/2 cup blueberries,kiwi fruit, and stemmed cherries.

  • Substitute any fruits you prefer in this recipe.

on 8/19/2009 Listen son, you can have any fruit you want in that recipe. Do you have diverticulitis? My sister has that, and seeds and nuts give her a bad time. Thanks for always being there for me.
