Things You'll Need:
- 1/2 bushel pickling cucumbers
- 2 large onions
- 2 green bell peppers
- 2 red bell peppers
- 6 cups apple cider vinegar
- 3 cups water
- 6 cups sugar
- 1/4 cup celery seed
- 1/4 cup mustard seed
- 1/4 cup salt

Step 1
Canning potFirst thing you need to do is prepare your jars and boiling water canner. Fill it with water and get it on the stove on high heat. Get the jars in and boil them.

pickling cucumbersPrepare veggies by washing them in cool water. get a large bowl of water and add the salt to it. This is where the veggies will go while chopping and preparing them.

chopped cucumbersNext by either using a chopper or food processor chop the cucumbers,Peppers,and Onions into a fine dice. As you are doing this put them into the bowl of salt water. It will take you some time to get all the veggies chopped up.

When you are done with the chopping. Leave all the veggies in the salt water for about 2 hrs.

Now, the next thing to do is add all the vinegar,sugar,water,celery see and mustard seed to a large stock pot. Bring it up to a boil. As this is coming to a boil. Remove all the chopped veggies and rinse all the chopped veggies well.

Now add all the chopped veggies to the stock pot with the vinegar mixture. Bring it back up to a boil for 5 minutes.

Now you need to remove the hot sterile jars from the boiling water so you can add the relish to them. Put the sweet pickle relish into jars up to just below the threads of the jar.

Place your lids and rings on and then tighten them.Put them into the canner and bring to a boil for 15 minutes. Then remove them and let cool. Listen for the pop when the jars seal. If they do not seal you may just refrigerate theweet pickle relish. It will stay for a quite a long time in the fridge.

The relish needs to stay in jars for a minimum of 7 days before you eat it to be sure the full flavor is achieved. This sweet pickle relish is more delicious as it sits in the jars.
