How to Make a Creamy Cucumber Salad

Creamy Cucumber salad is a cool and refreshing salad to go with many different meals. The salad is very quick to make and only uses six ingredients.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1/4 cup Miracle Whip dressing
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • 1/4 cup evaporated milk
  • 1/2 small red onion
  • 1 large cucumber
  1. Step 1

    In a small bowl, mix the Miracle Whip dressing, sugar and lemon juice. Stir in the evaporated milk and mix until the dressing thickens. Set aside.

  2. Step 2

    Thinly slice the red onion, separate the rings and place n a small serving bowl. Peel and thinly slice the cucumber. Add to the red onion.

  3. Step 3

    Pour the dressing over the cucumber and onion slices. Gently mix until the slices are covered with dressing. Add salt as pepper as desired. Place in the refrigerator for several hours for best flavor.

  4. Step 4

    This recipe makes 2 to 3 servings. It is easy to double the recipe by using 2 large cucumbers and 1 red onion. Store leftover salad in the refrigerator.

  5. Step 5

    This salad goes well with many main dishes such as barbecued burgers or steak, pork chops or chicken. It is also good with sandwiches for lunch.
