How to Make a Guilt-Free Cucumber/Dill Salad

Learn how to make a light, guilt-free and healthy cucumber salad with vinegar-dill dressing. This salad is perfect for summer meals, is great as a quick snack, and can easily be modified to suit your individual taste.

Instructions

Things You'll Need:

  • 1-2 medium-sized cucumbers
  • 1/2 cup balsamic vinegar
  • 1-2 cups water
  • 1 tbsp. dried dill weed
  • 1 tsp. black pepper
  • 1 1/2 tsp. salt or sea salt
  • 1-2 packets Splenda, Equal, or Stevia
  • 1 tsp. lemon juice
  • 1 mixing/salad bowl
  • 1 covered container
  1. Step 1

    Wash and peel 1-2 medium sized cucumbers. Cut cucumbers into very thin slices, so that they are almost translucent.

  2. Step 2

    Sprinkle a little salt onto cucumber slices, then store in a covered container in the refrigerator for 1-2 hours.

  3. Step 3

    In medium mixing/salad bowl, combine vinegar, water, remainder of salt, pepper, dill, lemon juice, and sweetener. Stir all ingredients until salt & sweetener are dissolved. Add more or less of each ingredient to taste.

  4. Step 4

    Remove cucumbers from refrigerator, rinse and drain excess water. Add to vinegar mixture, making sure all slices are submerged in the liquid. Cover bowl with plastic wrap or aluminum foil; return to refrigerator for 2 hours to allow cucumbers to absorb some of the dressing.

  5. Step 5

    Remove from refrigerator and serve when ready. Garnish with a lemon slice or fresh dill sprig if desired.

  6. Step 6

    Variations:
    1. Substitute red or white wine vinegar, apple cider vinegar, or rice vinegar.
    2. Include thinly-sliced green or red peppers with cucumbers
    3. Add tarragon, parsley, rosemary, or thyme to dressing.
