How to Make 'Hint of Mint' Chocolate Cake

This cake is perfect for summer birthdays. It is cool, refreshing and perfectly chocolaty.

Instructions

Things You'll Need:

  • Cake Ingredients
  • 1/2 a cup of chocolate chips
  • 1 stick (1/4 pound) of room temperature butter
  • 1 1/2 cups of sugar
  • 2 eggs
  • a large splash of vanilla
  • 2 cups of flour
  • 2 tablespoons baking cocoa
  • 1 1/2 teaspoons of baking soda
  • a dash of salt
  • 1 cup ice water Frosting Ingredients
  • 1 stick of room temperature butter
  • 2 cups of powdered sugar
  • 10 sprigs of fresh mint
  • 1 cup of water
  • green food coloring
  1. Step 1

    For the Cake:
    Preheat the oven to 350 degrees Fahrenheit.

  2. Step 2

    Butter and flour two cake pans.

  3. Step 3

    Place chocolate chips in a small saucepan. Melt slowly by creating a double boiler (put small pan over a larger one filled with boiling water). Set chocolate aside to cool.

  4. Step 4

    Cream butter until light. Pour in sugar and cream until light and fluffy.

  5. Step 5

    Add eggs and vanilla to butter mixture. Cream.

  6. Step 6

    Mix in cooled chocolate until well blended.

  7. Step 7

    Add in flour, baking soda, salt and cocoa powder.

  8. Step 8

    Pour in ice water and beat until smooth.

  9. Step 9

    Pour into cake pans and bake for 30 minutes or until knife inserted in center comes out clean.

  10. Step 10

    Pop cakes out of pans and cool.

  11. Step 11

    For the Frosting:
    Boil water, mint and food coloring down from one cup to a quarter cup. This should create a super condensed mint flavoring. Cool.

  12. Step 12

    Cream together butter and sugar. Add mint flavoring by the tablespoon as needed to create a smooth frosting.

  13. Step 13

    Frost cakes and serve chilled.
