How to Make Ice Cream Cheesecake

This Ice Cream Cheesecake with a brownie crust is absolutely to die for. My mom always made this for birthday's and other special occasions and now I love making it too. This is a very easy cake to make that is elegant and seems like it took a lot more effort than it really does. It is SO much easier than attempting to make an actual Cheesecake and this recipe is pretty hard to mess up. I think anyone could make this ice cream dessert successfully.

Instructions

Things You'll Need:

  • bag of brownie mix (amount for an 8x8 inch pan)
  • 8 oz cream cheese
  • 1.5 quarts vanilla ice cream
  • 8 or 9 inch spring form pan
  1. Step 1

    Set the Cream Cheese on the counter to soften. It takes more time to soften than the ice cream.

  2. Step 2

    Meanwhile, grease bottom of your springform pan and prepare brownie mix according to package directions. Spread the brownie batter in the bottom of your springform pan and bake according to package directions...about 25 minutes.

  3. Step 3

    When brownie crust is done cooking, remove from oven and place on a cooling rack. Allow the brownie crust to cool completely before proceeding to make your ice cream cheesecake. This is the most important step!

  4. Step 4

    After brownie has cooled completely, about 15 minutes before putting together the rest of your ice cream cheesecake, put your ice cream on the counter to soften.

  5. Step 5

    Place the entire contents of both the cream cheese and the ice cream into your electric kitchen mixer or a large bowl, and beat them together completely. (you don't have to use an electric mixer but it's a lot faster and easier).

  6. Step 6

    Pour the ice cream cheesecake filling over your brownie crust and spread out evenly with a spatula. At this point, you could swirl in some chocolate sauce or another filling/topping of choice but it's great without the extras.

  7. Step 7

    Cover with seran wrap and tin foil and place on a level surface in the freezer overnight, or at least several hours to completely set.

Tips & Warnings
  • When serving, you can drizzle the top with chocolate sauce or strawberry sauce.
  • My mom has also made it with oreo crumbs. While pouring the mixture into the pan, she would make pockets and fill them with oreo crumbs. You can also sprinkle a layer of oreo crumbs over the top before freezing.
  • You can switch it up by using different kinds of ice cream, such as strawberry, chocolate or whatever you think will taste good mixed with cream cheese.
  • Take out of freezer and let set a couple minutes before serving to soften the ice cream cheesecake, this will make it easier to cut and serve.
  • Plan ahead so you have enough time for the cake to set and refreeze. It's best to make this cake the day before you need it.
  • Make sure you let the brownie cool completely before making the ice cream filling.
