How to Make a Maxwell Street Polish Sausage
Chicago has many great culinary traditions, including the Chicago-style hot dog, Italian beef sandwich and deep-dish pizza. Another favorite is the Maxwell Street polish sausage, which is said to have been invented by Jimmy Stefanovic, who in 1939 took over his relatives' hot dog stand in the Maxwell Street marketplace. If you're not near Chicago but crave the polish sausage, you can make a similar treat at home. Does this Spark an idea?
Things You'll Need
- Polish sausage
- Hot dog bun
- Mustard
- Grilled onions
- Sport peppers (optional)

Boil or grill the polish sausage. It's best if you buy them with the casings, since they will give more snap and taste.

Put the sausage on the poppy seed bun.

Add some yellow mustard.

Grill the onion and add them last, unless you like the taste of sport peppers, which can then be added.

Tips & Warnings
A Maxwell Street Polish doesn't have all the condiments of a Chicago-style hot dog, but there is nothing wrong with preparing your polish that way. To do this, use yellow mustard, neon-green relish, diced onions, tomato wedges, sport peppers, a dill pickle spear and celery salt.
Just like on a Chicago Style Hot Dog, there is NO ketchup on a Maxwell Street Polish.
