-
Step 1
Set the oven to 250 degrees and turn on.
-
Step 2
Sterilize your jars and lids by placing them in boiling water until used.
-
Step 3
Pack the tomatoes in a sterilized jar.
-
Step 4
Fill the jar with hot liquid leaving one half inch of head space.
-
Step 5
Place lids on the jars and seal the top rings on the jars.
-
Step 6
Place the jars on cookie sheet.
-
Step 7
Place the cookie sheet in the oven.
-
Step 8
Bake the jars in the oven for one hour.
-
Step 9
After one hour turn stove off and open oven door just a crack.
If you open the door all the way jars can crack. -
Step 10
Let the jars set in oven overnight.
-
Step 11
In the morning all the jars should be cool and sealed, remove rings and put away. You can tell if the jars are sealed by looking at the lid. If the lid is indented they are sealed. If the lids are domed they are not sealed.

on 11/13/2009 I have heard of this being done in a wood stove, but not in modern electric or gas. I surely would worry about this method of canning. Cold pack, water bath is still the best way, and not hard at all.

on 10/28/2009 Yes, maybe the whole house will explode when you do this!!! Haha.... great tip! Nothing for sissies indeed. People sometime sforget that nit far more dangerous to drive a car in the USA than canning tomatoes!
