Chicken is an easy weeknight option. However, using the same recipe over and over makes it a bit boring. Try a new variation on baked chicken by introducing some tangy flavors. Things You'll Need

  • 1 pound chicken breast
  • Salt
  • Pepper
  • Oregano
  • Lemon juice
  • Baking dish

Instructions

      Purchase chicken breasts with the rib bone still attached. This cut prevents the chicken from drying out during cooking.

      Wash the chicken under running water and pat it dry with paper towels. Discard the towels and transfer the chicken to the baking dish. Preheat the oven to 400 degrees Fahrenheit.

      Rub the chicken down with olive oil, coating it evenly on all sides. Sprinkle salt, pepper and oregano over both sides of the chicken, coating the entire breast and underside. Place the chicken breasts back in the baking dish, rib side down.

Reduce the temperature of the oven to 325 degrees and bake an additional 30 minutes or until golden brown. The chicken is ready when it has an internal temperature of 165 degrees F as read by a meat thermometer.
