      In a pan or skillet heat two ounces on canola oil on low heat

      With plantain in hand cut off both ends. Remove the tips of the plantain.

      Take a knife and slice the plantain length wise from top to bottom. Do not cut through the plantain. Simply cut off the green tough skin. It is a little easier if you make three to four length wise slices.

      Now using your thumbs begin to peel off the green skin. This will expose the actual plantain. Discard the peel.

      With knife cut the plantain diagonally approximately 1/2 inch thick.

      When the oil is hot put the plantains into the hot oil and cook for about two to three minute on each side.

      Remove the plantains from the oil with a slotted spatula( to remove canola oil). Have a plate layered with three paper towels. This is where you will lay the plantains. This will remove any excess oil from the banana.

      Keep the pan with the canola oil on and turn the flame higher to medium. Take another paper towel and place over the plantains. You can use many things to flatten the plantain. I use whatever is handy such as a small plate or the bottom of a jar.

      You want to press lightly making sure that you are not breaking the plantain(flatten just a little). Now return the plantains into the hot oil again.

      Cook until the first side is golden brown and turn over only once until the other side is golden brown. Remove from the pan with slotted spatula. Place on a paper toweled line plate.

      You can sprinkle a dash of salt and pepper if you like(optional).

      Plantains can be eaten alone or with a meal.
