How to Make Cucumber Onion Dip

This cucumber onion dip can be used for several different dishes. It is designed as a chip dip, however, we also use it for a vegetable dip and as the base on a cool veggie pizza or a alternative to mayo on a grilled chicken sandwich.

Instructions

Things You'll Need:

  • 2 8oz reduced fat cream cheese
  • 1/2 med onion
  • 1 med/large cucumber
  • reduced fat mayonnaise
  • salt and pepper to taste
  1. Step 1

    In a large mixing bowl add softened cream cheese, mayo, salt and pepper. Peel the cucumber and grate over bowl so that juices mix with cream cheese mixture. Grate onion to taste into mixture. Stir with a fork until well mixed. Do not use a mixer.

  2. Step 2

    Refrigerate dip for at least 2 hours before serving. Can be made up to 3 days prior to use and will have a better taste if made in advance.

  3. Step 3

    Use in place of ranch vegetable dip for a healthier alternative. Substitute dip in place of mayo on grilled chicken sandwiches for a more refreshing flavor.
    Spread over cooked pizza crust and top with fresh sliced vegetables and cheese for a cool veggie pizza.

Tips & Warnings
  • Remove dip from ice box about 30 minutes prior to use to soften.
