How to Cook Beef Skirt Fajitas

Skirt steak is an affordable, yet tasty, alternative to expensive cuts of beef, and there are dozens of ways that skirt steak can be used in recipes. Baked, cubed and pan fried, barbecued, or as fajitas, beef skirt steak is a very versatile cut, and with a few simple tips you can make sure everyone has their steak cravings satisfied at dinner time.

Instructions

Things You'll Need:

  • 1.5 pounds beef skirt steak
  • Medium or large skillet
  • 1 large onion
  • Garlic, amount according to taste
  • 1/2 cup beef or chicken broth
  • 1-2 large bell peppers (green, yellow, or red)
  • 1-2 anaheim chilies, or any mild chile
  • Red and/or black pepper according to taste
  1. Step 1

    Skirt steak is usually best when marinated for between 15 minutes and one hour in some combination of citrus and either salt or sauce. For fajitas, lime juice and a tiny bit of soy sauce are a great combo, and the meat gets tenderized this way without adding an overwhelming flavor to the meat. Add a bit of crushed or minced garlic to the marinade to add extra flavor.

    It is best to prepare all veggies, and all canned items, while the meat is marinating. If you are using any sort of canned vegetables, make sure you drain all water from the canned vegetables first. You should cut the vegetables into strips, so that they can be better wrapped up in a tortilla, and also so they have the look of traditional fajitas. Once all veggies are cut, and the meat marinade has been drained, you are ready to start cooking.

  3. Step 3

    Add the drained meat to a pan over medium heat, adding the garlic from the marinade and a bit more to the pan with the meat. Add a bit of the broth at to keep the skirt steak pieces from sticking to the pan. Fry the meat over medium or med-low heat, stirring occasionally, until it begins to brown around the edges.
    Once the meat is browned, add the vegetables and the remaining broth to the pan and fry over medium heat, stirring occasionally, until most of the stock has cooked off and the veggies are tender. This should take anywhere from 10 to 20 minutes.
    Overall, the cooking process should take from 15-30 minutes, depending on how much meat and veggies are used, and what temperature it is all cooked.
    Once the meat, veggies, and stock have been mixed entirely, and the ingredients have reached a uniform temperature throughout, you are ready to serve your fajitas.

  4. Step 4

    Fajitas are typically served with tortillas, and common Mexican side dishes are Spanish rice and refried beans. Fajitas go great with any kind of salsa and topping you want, from sour cream to guacamole to cheese, and can be served as tacos/burritos or simply on its own as an entree.
    Fajitas are best served while still warm/hot, although allowing the fajitas to cool down a little bit after cooking will let the sauce set a bit, and will give the sauce enough time to soak into all the ingredients.
