We are going to start with the ingredients needed to make this healthy but yet tasty meal that I am sure you will enjoy time and time again. This will become one of your favorite snacks to make to eat at home or even take to the beach, picnic or social snack.

Ingredients:
4 x 10 inch wraps
3 fresh buffalo mozzarella cheeses ( or your choice of mozzarella), drained and sliced.
4 plum tomatoes, each sliced into eighth's
a small bunch of arugula
For the Pesto:
2 1/2 oz. pine nuts
1 garlic clove crushed
a small bunch of fresh basil
4 tblsp. of extra virgin olive oil
2 1/2 oz. Parmesan cheese freshly grated
Salt N Pepper -
Step 3
To make the pesto, put the pine nuts, garlic and basil in a food processor, then process, adding the olive oil a tablespoon at a time. When the mixture is smooth, scrape into a bowl, then add the parmesan cheese and salt n pepper.
Preheat a non-stick skillet or broiler pan until almost smoking, then add the wraps, 1 at a time and cook for about 10 seconds on each side. This will give it color and also soften up the wraps.
Spread the presto over the wraps.
Divide the slices of mozzarella cheese evenly among the wraps, placing some in the center of each wrap, then top with the tomatoes and the arugula.
Fold in each wrap at the ends, roll up, cut into slices or serve each wrap whole. Your choice.
