How to Make The Southern Banana Pudding

This is my Mother's southern banana pudding recipe. The northern version (what we get at restaurants up north) is NOT even close to being as good as hers. It is simple and easy. And can be made in a low fat, low calorie form and is almost as tasty that way.

Instructions

Things You'll Need:

  • six bananas
  • 2 cups of whole milk (1% if your watching calories)
  • nabiscos vanilla wafers one box
  • one box of jello pudding, THE COOK IT KIND NOT THE INSTANT.(makes all the difference.
  • one tsp of vanilla flavoring
  • 3 egg whites
  • two Tablespoons of sugar (or splenda two little packs)
  1. Step 1

    Cut your six bananas into 1/4 inch slices so they are round slices.

  2. Step 2

    Put a banana layer on the bottom of a deep bowl (preferably a bowl that is oven proof)

  3. Step 3

    Follow that with a layer of nabisco wafers and continue to layer bananas and wafers until all your wafers are used up and all your bananas are used up

  4. Step 4

    Cook the vanilla pudding according to the recipe on the box. Don't let is scorch the pan. Stir frequently.

  5. Step 5

    Pour slightly thickened, hot pudding over your layers of bananas and wafers.

  6. Step 6

    Beat egg whites until stiff. Add 2 tablespoons of sugar or splenda. Add one tsp of vanilla flavoring to stiffened egg whites and blend.

  7. Step 7

    Pour stiffened egg whites over your pudding mixture and either place in broiler for a couple minutes until lightly browned or use small blow torch to brown the peaks of the stiffened egg whites.

  8. Step 8

    Chill in fridge for 2-3 hours. Enjoy.

Tips & Warnings
  • Nabisco wafers are the best wafers to use. Jello brand pudding that you have to cook is a must. It makes the wafers soft. The instant kind goes on cold and the wafers remain hard. If you don't have a broiler on your stove you can substitute cool whip but its not as good.
  • The broiler only takes a couple minutes to brown the beaten egg whites so watch it closely. If you don't use an oven proof bowl the broiler could break your bowl. Only use a glass bowl that's not oven proof if your going to blow torch the topping.
