Tired of turkey sandwiches? Use your leftover Thanksgiving or Christmas Turkey to make these easy, delicious, asian-flavored Turkey Wraps!

Difficulty: Easy
Instructions

Things You'll Need:

  • leftover roasted turkey (or chicken)
  • large spinach flour tortillas or sandwich wraps
  • chopped Thai basil or cilantro
  • salted peanuts
  • coleslaw mix
  • mayo
  • mango chutney
  • curry powder
  1. Step 1

For 4 wraps - Combine 1 Cup mayo, 1/4 Cup chutney, and 2 teaspoons curry powder in large bowl.

  2. Step 2

Mix in 1 and 1/2 Cup coleslaw mix. I like the carrot, green and red cabbage mix the best.

  3. Step 3

Mix in 2 Cups of shredded roasted turkey or chicken. Salt and pepper to taste.

  4. Step 4

Place 1/4 of the turkey-coleslaw mix on one side of the tortilla and top with 1/4 Cup Thai basil or cilantro and 2 Tablespoons of salted peanuts.

  5. Step 5

Roll up like a soft taco. Wrap in plastic wrap and chill for one hour or overnight.

  6. Step 6

To serve, carefully unwrap plastic wrap and cut in half at a sharp angle. Place one half flat on plate. Place second half of wrap at right angle, so that cut end rests on top of first. Garnish with additional basil or cilantro.
