Rosemary chicken is a healthy recipe that everyone should have in their recipe file. This version is an easy recipe and low-fat, which means it's an incredibly healthy source of protein, and one of the best chicken recipes you'll find.

Instructions

Things You'll Need:

  • Chicken breasts
  • Rosemary (either dried or fresh if it's available)
  • Olive oil
  • Baking pan
  • Salt & pepper to taste
  1. Step 1

    The first thing you'll need to do to make this a low-fat recipe is to remove the skin from the chicken breasts. According to WebMD (link in the resources below), half of the fat in chicken is in the skin, so this is crucial to making this a low-fat dish.

  2. Step 2

    Drizzle some olive oil into the baking pan so that the bottom is lightly oiled. Next, place the chicken breasts in the baking pan, placing them in a single layer on the bottom of the pan.

  3. Step 3

    Drizzle just a little bit of olive oil onto the chicken breasts, and then sprinkle each chicken breast with a touch of salt and pepper.

  4. Step 4

    Sprinkle the rosemary onto the chicken breasts. I love fresh rosemary, but you can use dried if that's all that's all that is available.

  5. Step 5

    Bake the chicken in a preheated oven for about 45 minutes at 325 degrees. (Check that the chicken is cooked before serving. Oven temperatures can vary.)

Tips & Warnings
  • We grow rosemary outside our kitchen door and use it all year-round. Rosemary is surprisingly hardy when grown in a protected area.
  • We jokingly call this dish "Chicken with Sticks" because we always use fresh rosemary.
  • If the chicken seems to be browning too quickly, cover the pan with aluminum foil and continue cooking. This will lock in the juices and keep the chicken from drying out.

on 10/2/2009 This recipe was great, I was not aware of that half of the fat of the chicken was in the skin! I broiled a whole chicken yesterday and as I was taking off the skin I kept thinking about the fat,and although it was very tedious work I didn't mind doing it b/c I was taking all the fat out. The chicken retains the flavor from the sesoning better and I was able to make incisions throughout the chicken to insert the rosemary. I also added honey, olive oil and lime mixed together for extra flavor, everytime I saw the chicken was drying up I'd pour it over the chicken. I also sliced up two oranges and placed that on top of the chicken and on the sides as well.It came out delicious and juicy. THX!!!
