How to Make Delicious Meatloaf

with the tough times we are in, it is good to make meals that will last with less expensive meat. This recipe is delicious!! And makes wonderful meatloaf sandwiches the next day for lunch!!!!

Instructions

Things You'll Need:

  • 3 pounds of good ground chuck
  • 1/3-1/2 loaf white bread
  • 3 eggs
  • 1 small to medium green pepper
  • Medium onion
  • milk
  • Jane's crazy mixed up salt (to taste)
  • Black pepper (to taste)
  • parsley chopped (dry or fresh) (2-3 tablespoons)
  • rubbed sage 1 teaspoon (can add more if needed, very strong but important)
  • Worcestershire sauce (2 Tablespoons or to taste)
  1. Step 1

    First chop onion and green pepper into small pieces and precook in small amount of water. Put aside to cool when tender.

  2. Step 2

    Next add egg, Jane's pepper, parsley, sage and Worcestershire sauce in large bowl and mix well.

  3. Step 3

    Break 1/3 loaf of soft white bread into small pieces and add to mixture in bowl. You must now with your hands or a pastry blender (worth buying for use in meatloaf and stuffing.. it is a small, cheap hand tool that has a handle and some metal rungs that allow you to mush and cut), turn this bread into mush without any large lumps of bread. this will probably be too dry so use a little milk to moisten the bread so that it can be worked. The juice that is left in the onion/green pepper is also good for wetting the bread.

  4. Step 4

    When the bread mixture is ready, add the ground beef mixing well.

  5. Step 5

    Next add the green pepper and onion and mix again.

  6. Step 6

    Next do a test... take about four tablespoons of the final mixture and make a meat patty. Cook this in the microwave for a minute until done. Now taste!! This is when you can add to the entire bowl any salt or other seasoning so that it will be perfect. Also, more bread can be added to the entire mix if it is too hard. (soften additional bread in another container with a little milk and mush again until right, then add.)

  7. Step 7

    When you are happy with your mix, flavor and consistency, shape it to fit your baking pan. It should touch the pan on each end but the sides should have some space. Dont fill the pan like you would a cake. Remember to make it thick (tall) because it will flatten out a litte.

  8. Step 8

    Put a little water into your pan and cut a fresh tomatoe into slices and put on top of the loaf. cover with foil tightly and bake in a 350 oven until done. Use meat fork to be sure when it is done. Allow at least one hour or more for cooking.

Tips & Warnings
  • The most important thing about meatloaf is the texture. Not enough bread - too hard. Too much bread, soft meatloaf!!!
