Things You'll Need:
- 5 pounds of russet potatoes peeled and cut into chunks
- 1 green pepper, chopped
- 6 eggs, hard boiled
- 6 large celery stalks, chopped
- 1/2 onion, chopped
- 10 tablespoons of mayonnaise
- 10 tablespoons of sour cream
- 2 tablespoons of mustard
- 1/4 teaspoon of salt
- 1/4 teaspoon of pepper
- paprika for garnish

Step 1
Start by peeling your potatoes and cutting them into medium chunks. Boil them in salted water until fully cooked. While potatoes are boiling, hard boil 6 eggs. Chop green pepper, onion and celery and set aside.

In a large serving bowl combine mayo, sour cream, mustard, salt and pepper. Set aside. Once potatoes are done cooking, let cool in a colander. After eggs have cooled, peel them. Chop 5 of the eggs leaving 1 for a garnish.

After potatoes have cooled add them to the mayo mixture. Add chopped eggs and mix well. Take remaining egg and cut into slices. Sprinkle top of potato salad with paprika and place egg slices on top for decoration. Enjoy.
