How to make Grilled Stuffed Flank Steak

I made this for dinner last night. It was delicious! The taste of the grilled and seasoned flank steak, bacon and bleu cheese was divine!! A real winner!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • cooking twine
  • grill
  1. Step 1

    Ingredients:

    2 pounds flank steak
    olive oil
    fresh spinach (a handful)
    1/4 c. bleu cheese - crumbled
    1/4 c. bacon (broken into small pieces)
    1/4 c. Shredded carrot
    4 cloves of garlic, minced
    salt & pepper
    kitchen twine

  2. Step 2
    Season  flank steak
     
    Season flank steak

    Flatten your flank steak on a wooden cutting board. Oil both sides. Season with salt & pepper and scatter your garlic around the flank steak. Place your spinach on your flank steak. Then scatter your bacon crumbs, bleu cheese and carrots.

  3. Step 3

    Roll the flank steak like a jelly roll and secure with your kitchen twine. Place twine in middle and ends. Brush the flank steak roll with olive oil and season with salt & pepper. Heat grill and cook on both side of the roll at high heat for 10 minutes. Then turn the grill to medium heat and cook for another 15-20 minutes. When the flank is done cooking, take off the grill and wrap in aluminum foil. Let settle for 10 minutes in foil before cutting.

    Cut, serve and enjoy!

    Cut into 1 inch slices. I served with grilled potatoes with roasted peppers and a nice spinach salad with hearts of palm, dried cranberry, cucumber and a lime/orange/mustard vinaigrette.

Tips & Warnings
  • We made lime margaritas with the meal - was great!
