My Chocolate Cupcakes with Peanut Butter Frosting

I just love, love peanut butter. Anything peanut butter. So you will see why this recipe is my all time favorite peanut butter recipe. It's delicious on chocolate cupcakes, banana cupcakes, or any flavor of cupcake that's your own favorite. My favorite is on chocolate cupcakes. I also put it on bananas, apple slices and vanilla wafer cookies. I am always looking for new ways to use this frosting, so if you think of something original, please share it with me. Thanks so much.

Instructions

Things You'll Need:

  • Electric mixer
  • Bowl
  • 1 cup powdered sugar
  • 1 cup peanut butter
  • dash salt
  • 5 tablespoons of butter, at room temperature
  • 1/3 cup heavy whipping cream
  • 1 teaspoon vanilla
  1. Step 1

    With an electric mixer, cream the peanut butter with the butter until very smooth.

  2. Step 2

    Add the powdered sugar and the salt. Add slowly and mix thoroughly. You want to add a little powdered sugar at a time, or it will go all over the place. Also, use the mixer on low until you get it all mixed thoroughly.

  3. Step 3

    Now add the heavy whipping cream and the vanilla. Beat on low until smooth.

Tips & Warnings
  • If you want your frosting stiff enough to use with a decorator' s tip, you will need to slowly add a little more of the powdered sugar until you reach the desired consistency.
  • I use the large star tip to frost my cupcakes and top with Toll House brand miniature semi sweet chocolate chips or a chocolate covered peanut. Yum!!
  • Enjoy!!
  • May give you a sugar high:P But I think you will love it.
