How to Make a Basic Potato Salad
A basic potato salad is a simply seasoned and creamy side dish served at barbecues or with sandwiches. Some potato salads use mustard and pickles. This version does not, though they can be added if you think they are necessary for a basic potato salad. This recipe will make 4 to 6 servings. Does this Spark an idea?
Things You'll Need
- 8 to 10 small white or Yukon Gold potatoes
- 1 small onion, finely chopped
- 2 stalks celery, finely chopped
- 2 hard boiled eggs, chopped
- 2 tsp. vinegar
- 1/2 cup mayonnaise
- Seasoned salt (to taste)
- Pepper (to taste)

Cut the potatoes in half and place them in a medium size saucepan. Cover with water and season them with seasoned salt.

Boil the potatoes for 10 to 20 minutes or until the potatoes are tender when pierced with a fork. Drain off the water. Place the potatoes in the refrigerator for several hours, or cover them with ice cubes and cold water.

In a mixing or serving bowl, slice the potatoes into bite-sized cubes. Add finely chopped onion and celery, and sprinkle it all with vinegar, seasoned salt and pepper. Gently stir in mayonnaise until the potatoes are coated.

Sprinkle hard boiled eggs on top. Place the salad in the refrigerator until time to serve. This recipe will make 4 to 6 servings.

Tips & Warnings
Promptly refrigerate any leftovers. Sprinkle paprika on top of the salad to add color and flavor.
