A Dutch baby pancake, often called a German pancake or simply Dutch pancake, is an oven-baked breakfast dish with a custard-like center similar to Yorkshire pudding. The Dutch baby is distinctive for the amount that it rises during the cooking process, with the edges puffing well above the pan. While the traditional Dutch baby has no fruit and is topped with lemon juice and sugar, there are other varieties that have fruit cooked inside and no lemon juice on top. Things You'll Need
- Oven-safe 10-inch pan
- Wire whisk
- Set of measuring cups
- Set of measuring spoons
- 4 tablespoons butter
- 2/3 cup room temperature milk
- 2 teaspoons vanilla extract
- 1 teaspoon lemon zest
- ¼ cup fresh lemon juice (optional)
- 4 cups fresh or thawed frozen berries or mangos (optional)
- 1 ripe banana (optional)
- 3 medium or large eggs
- 1/3 cup sugar
- 2 tablespoons powdered sugar
- pinch of salt
- 2/3 cup all-purpose flour

Preheat the oven to 425 F. Place the pan in the oven at this time to heat up as well.

Whisk the eggs, sugar, salt and lemon zest. Combine thoroughly.

Mix in the flour and milk. Mix until the batter is smooth.

Add two cups of the mixed berries or mangos to the batter if you wish to add fruit. If you would like to add a banana in quartered slices, do so now as well. For the traditional Dutch baby, skip this step and do not add fruit.

Melt the butter in the pan. Spread the melted butter over the bottom to coat the pan. Add the batter to the pan. Stick the pan back in the oven.

Cook the Dutch baby 22 minutes or until the edges are a golden brown. As the batter cooks, the edges will rise considerably.

Top the traditional Dutch baby with the lemon juice. Do not use the lemon juice for the fruit version.

Sprinkle the powdered sugar over the top. Evenly distribute the sugar over the entire top.

Cut into wedges and serve. For the fruit version, use the remaining fruit to top each slice as you serve it.
