Tilapia is the fifth most important fish in aquaculture and, as a result, is among the cheapest fish available in many supermarkets.   • 2 eggs
  • 4 tilapia fillets
  • 1 cup all-purpose flour
  • 1/2 cup Parmesan cheese
  • 1 cup breadcrumbs
  • Salt and pepper to taste

      In a shallow bowl or dish, beat the eggs until they are thoroughly scrambled and thin this mixture with a little water or buttermilk. Season the fillets with salt and pepper on both sides. Coat the fillets in flour, them dip them in the egg wash.

      Mix the breadcrumbs and Parmesan together in another dish. Shake off excess flour and egg wash, and coat the fillets in the breadcrumb and Parmesan mixture. Place the fillets on a wire rack to create a crust.

      Heat a skillet with oil on medium heat, then arrange the fillets around the edges. This ensures that each piece will cook evenly. Cook four minutes on each side, then drain on the wire rack for a few minutes before serving.
