How to Cook Vegetarian Spaghetti

Spaghetti is both delicious and easy to make. Here is a vegetarian version that can be whipped up quickly for unexpected guest, or for a quick dinner when you've gotten home late from work.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 1 to 2 tbsp olive oil
  • 1 jar pasta sauce
  • 1 medium onion
  • 1 clove garlic
  • 2 links vegetarian italian sausage Tofurky brand is my preference
  • 1 pound spaghetti
  • 1/2 tsp each, basil, oregano and thyme
  1. Step 1

    Fill a large spaghetti pot with water and a tablespoon of sea salt. Place on the stove at high heat and allow to boil. While waiting for the water to boil slice the onion into thin slices and mince the garlic.

  2. Step 2

    Into a large skillet pour 1 to 2 tablespoons of olive oil and heat over a medium flame. Once the oil is hot add the onions and garlic and allow to cook until the onions are translucent. While the onions are cooking slice the vegetarian italian sausage. When the onions are cooked until translucent add the sausage and let heat through.

  3. Step 3

    Once the sausage is heated add the jar of pasta sauce, basil, oregano and thyme. Turn down the heat to low and allow to simmer.
    When the water has started to boil add the spaghetti and let cook until the pasta is soft but still firm. Drain the pasta and pour into a serving bowl. Pour the sauce mixture over the pasta and serve with freshly grated parmesan cheese. (Kraft parmesan works okay, but fresh is so much better).

Tips & Warnings
  • Fresh grated parmesan is much better than Kraft.
  • Be sure that you do not over cook the pasta, mushy is not good.
