How to Make Easy Vegetarian Burritos

A recipe for healthy vegetarian burritos ready in less than 30 minutes!

Things You'll Need:

  • 2 cups of quick-cooking brown rice
  • 1 cup of dried lentils
  • 1/2 cup of frozen broccoli
  • 1/2 cup frozen pepper and onion stir fry mix
  • 1 cup of low-fat Monterey Jack cheese
  • 1 package lower-sodium taco seasoning
  • 8 whole grain tortillas
  1. Step 1

    Pour lentils into a small saucepan and add just enough hot water to cover them. Boil covered on medium heat for approximately 20 minutes.

  2. Step 2

    While the lentils are cooking, boil rice according to package directions. Put frozen broccoli, peppers and onions into a microwaveable glass bowl. Add two tablespoons of water and microwave for 5 minutes.

  3. Step 3

    When vegetables are heated, chop them into small pieces. Pour into a large bowl. Add cooked brown rice and taco seasoning. Using a wooden spoon, combine thoroughly.

  4. Step 4

    Finally, add lentils to the rice mixture. Add cheese and stir while rice and lentils are still hot. The cheese should act as a "glue" to help the rice, lentils, and vegetables stick together.

  5. Step 5

    Wrap tortillas in a damp paper towel and warm in microwave for 20 seconds. Scoop burrito mixture into tortillas and serve with your favorite salsa and sour cream! This recipe makes 8 large burritos-be prepared for leftovers!

Tips & Warnings
  • For a non-vegetarian version, substitute one cup of cooked chicken, cut into bite-size pieces, for the lentils.
