A simple recipe for delicious chicken parmesan.

Difficulty: Easy
Instructions

Things You'll Need:

  • 2 Boneless skinless chicken breasts or "thin sliced" chicken breast pieces
  • 1/2 C Bread crumbs
  • 1 tsp Italian seasoning or 1/2 tsp basil and 1/2 tsp oregano
  • 1/4 tsp Garlic powder
  • 1 Tbsp Grated parmesan cheese
  • 2 Tbsp Olive oil
  • Serves 2
  1. Step 1

Start by pounding chicken breasts for about 30 seconds to make them as thin as possible. You can skip this step by purchasing "thin sliced" chicken breasts, available at most grocery stores.

  2. Step 2

If you choose to serve pasta and sauce with the chicken (recommended), start boiling water for pasta and heating sauce over low heat, stirring occasionally. When water comes to a boil, follow cooking instructions for pasta on packaging.

  3. Step 3

Heat olive oil in frying pan over medium heat.

  4. Step 4

Mix together bread crumbs, Italian seasoning (or basil and oregano), garlic powder and parmesan cheese.

  5. Step 5

Coat chicken completely in bread crumb mixture and place in frying pan.

  6. Step 6

Cook until lightly browned on each side and juices run clear - approximately 4 to 5 minutes per side, depending on the thickness of the chicken.

  7. Step 7

Serving suggestion: serve over pasta and top with pasta sauce.

Tips & Warnings
  • To reduce calories, trim excess fat from chicken
  • Be sure chicken is cooked all the way through
