Here’s a vegetarian version of Sweet Potato and Sausage Casserole that is easy to make. Tasty and nutritious, this casserole makes a nice accompaniment for any holiday meal.

Instructions

Things You'll Need:

  • Two Pounds Sweet Potatoes
  • 2 tsp Oil
  • 8 ounces Vegetarian Sausage Patties, chopped
  • One Small Onion, finely chopped
  • 2 Stalks Celery, finely chopped
  • ½ Green Pepper, finely chopped
  • Pinch of Sage
  • Pinch of Thyme
  • Two Eggs, separated
  1. Step 1

    Assemble your ingredients. Preheat oven to 375° F. Generously butter a 1 ½ quart casserole dish.

  2. Step 2

    Peel the sweet potatoes. Cut them into 2-inch pieces. Cook in boiling water until tender. Drain well and mash.

    While the sweet potatoes are cooking, heat the oil in a large frying pan. Add the vegetarian sausage (I use Morning Star--available in the freezer section of many grocery stores) to the frying pan and cook until browned.

    Add the onion, celery, and green pepper to the frying pan and cook 5 minutes more. Sprinkle the seasoning over the sausage mixture and stir to blend flavors. Remove from heat.

  4. Step 4

    Separate the eggs from the yolks. Beat the egg yolks into the mashed sweet potatoes.

  5. Step 5

    Beat the egg whites until stiff but not dry.

  6. Step 6

    Add the sausage mixture to the sweet potatoes. Fold in the egg whites. Mix gently until well blended.

  7. Step 7

    Place the sweet potato and sausage mixture in the buttered casserole dish. Bake in 375° oven until brown on top, about 25 to 30 minutes.

Tips & Warnings
  • For the vegetarian sausage I like patties better than sausage links, but that is a personal preference. You may like the links better. Morning Star makes both.
  • If vegetarian sausage is not available in your grocer’s freezer, check the health food section of the store.
