Things You'll Need:
- Two Pounds Sweet Potatoes
- 2 tsp Oil
- 8 ounces Vegetarian Sausage Patties, chopped
- One Small Onion, finely chopped
- 2 Stalks Celery, finely chopped
- ½ Green Pepper, finely chopped
- Pinch of Sage
- Pinch of Thyme
- Two Eggs, separated

Step 1
Assemble your ingredients. Preheat oven to 375° F. Generously butter a 1 ½ quart casserole dish.

Peel the sweet potatoes. Cut them into 2-inch pieces. Cook in boiling water until tender. Drain well and mash.

Vegetarian Sausage Patties--perfect for this recipe.While the sweet potatoes are cooking, heat the oil in a large frying pan. Add the vegetarian sausage (I use Morning Star--available in the freezer section of many grocery stores) to the frying pan and cook until browned.
Add the onion, celery, and green pepper to the frying pan and cook 5 minutes more. Sprinkle the seasoning over the sausage mixture and stir to blend flavors. Remove from heat. -
Step 4
Separate the eggs from the yolks. Beat the egg yolks into the mashed sweet potatoes.

Beat the egg whites until stiff but not dry.

Step 6
Add the sausage mixture to the sweet potatoes. Fold in the egg whites. Mix gently until well blended.

Step 7
Place the sweet potato and sausage mixture in the buttered casserole dish. Bake in 375° oven until brown on top, about 25 to 30 minutes.
