Acorn squash can look intimidating at first. It is so easy to cook though! It makes an excellent bowl for holiday dishes or for dinner parties. It tastes great and is very nutritious. Using the microwave cuts the cook time so dinner is ready in no time!

Instructions

Things You'll Need:

  • acorn squash
  • microwavable dish
  • plastic wrap
  • cutting board and large knife
  1. Step 1

    Rinse the acorn squash well under warm water. Dry it off with a paper towel so you can grip it good when cutting. Place the squash on the cutting board. They are very hard to cut in half so some muscle is helpful. BE VERY CAREFUL WHEN CUTTING! Cut the squash in half LENGTH WISE using a sharp butcher knife.

  2. Step 2

    Now, scoop the seeds out with a spoon. Lay the squash in a microwavable dish with sides cut side down. Cover it with plastic wrap.

  3. Step 3

    Place the dish in the microwave and cook it for 12 minutes. If your microwave doesn't have a turn table, stop and turn the dish half way through the cook time. When it's done, remove the wrap and turn over. They are now ready to fill with anything you choose!

Tips & Warnings
  • Sweet Italian sausage and pasta are great served in these!
  • Please be very careful when cutting them in half!
