Similar to a pancake, only lighter and thinner, the French crepe has undergone a resurgence in popularity over the past decade, with crepe restaurants springing up in various US cities and specialty retailers like Williams Sonoma and Sur la Table selling crepe pans to eager foodies. Sample a sweet crepe for dessert and you will understand the renewed interest. Tasty, light and elegant a sweet crepe makes the perfect dessert. Fortunately, crepes are easy to make and with a little practice, you can add this staple French food item to your cooking repertoire.

Instructions

Things You'll Need:

  • Crepe pan
  • 1 cup of flour (wheat or white)
  • 2 eggs
  • 1 cup of milk
  • 2 teaspoons of melted butter or vegetable oil
  • pinch of salt
  • 1/2 tablespoon of sugar
  1. Step 1

    Combine flour, milk, water, eggs, salt, sugar and oil in medium mixing bowl and beat with beater or hand-held whisk until well blended. Refrigerate mixture for at least one hour, preferably overnight.

  2. Step 2

    Gently pour 1-2 ladles full of batter onto crepe pan. Lift pan and tilt from side to side until the pan is coated in a thin, even coat of crepe batter. Cook for approximately 3 minutes.

  3. Step 3

    Flip crepe over gently with a spatula and cook the second side of the crepe for 1-2 minutes. Add crepe filling such as butter and sugar, nutella and strawberries, chocolate and bananas, jam or fruit spread—filling possibilities are endless!

  4. Step 4

    Fold crepe with spatula, gently remove from crepe pan and place on plate. Add a sprinkling of powdered sugar sliced fruit, or, for true decadence, a small scoop of ice cream. Repeat the process until you have prepared the desired amount of crepes. Serve with tea or coffee. Bon appetit!

Tips & Warnings
  • If you prefer, you can add filling after removing the crepe from crepe pan, rather than while crepe in still in pan.
