Pasta salad is such a good summer time or picnic time side dish. Here is a way to make it healthy for you and great tasting.

Instructions

Things You'll Need:

  • Whole wheat extra fiber penne pasta.
  • Light Italian dressing.
  • Black olives
  • pepperoni.
  • Northern beans.
  • Mozzarella cheese.
  • Cherry tomatoes.
  1. Step 1

    First boil your pasta until it is done, check the package for times. I use whole wheat extra fiber Penne pasta, makes this dish healthy for you.

  2. Step 2

    Drain the pasta and run cold water over it and place in refrigerator to cool off.

  3. Step 3

    While your pasta is cooling, chop up in a large bowl, cherry tomatoes, in halves, black olives in halves, small pieces of mozzarella cheese, add your can of beans. You could substitute any type of bean you like here, this also makes this dish healthy for you. Chop up your pepperoni slices in small pieces.

  4. Step 4

    Your pasta should be cooled off by now. Add the pasta to your bowl, and stir everything together. Add half a bottle of Light Italian Dressing and stir everything together. Taste to make sure it has enough dressing. Then top it off with a sprinkle of parmesan cheese.

  5. Step 5

    This dish tastes great, especially when on a picnic. Your friends and family will love it.
