Make a Cool Cucumber with fat free ranch yogurt dressing side dish for those hot summer days

On those hot days, there is nothing as refreshing as having cool cucumbers as a side dish. This recipe is made with non fat organic Greek yogurt and Hidden Valley's original Ranch salad dressing.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 medium size cucumber
  • 1 5.3 oz of organic non fat Greek yogurt
  • 1/2 envelope (1/2 oz) of Hidden Valley original ranch salad dressing.
  • parsley flakes
  1. Step 1
     

    Clean the cucumber under cool running water. Cut and discard the edges.

  2. Step 2
     

    with a vegetable peeler, peel about 1/2 inch of skin and leave 1/2 inch of skin on, alternate all the way around.

  3. Step 3
     

    slice the cucumber in about 1/4 inch slices.

  4. Step 4
     

    place the cut up cucumber on a flat plate and make a pinwheel around the edges, make certain you overlap each slice.

  5. Step 5
     

    mix the yogurt with the ranch dressing in a separate bowl

  6. Step 6
     

    spoon a ribbon of the yogurt ranch dressing in the center of the pinwheel.

  7. Step 7
     

    If there is any remaining dressing place it in a small container in the center of the bowl, for those who like extra dressing.

  8. Step 8

    sprinkle with parsley flakes. refrigerate until ready to serve.

Tips & Warnings
  • fresh parsley can be substituted with the parsley flakes.
  • sour cream can be substituted for the yogurt.

on 8/13/2009 I have so many cucumbers from the garden. Thanks for this great recipe. I need to find more ways to eat them. Also the pictures are great. Some people just put up random things, these are really informative and well done.

Watch you punctuation and capitalization, you don't seem to be consistant.
