Things You'll Need:
- 2 cups all purpose flour
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 teaspoon sugar
- 2 cups buttermilk
- 6 tablespoons melted butter (unsalted)
- A dash of vanilla
- 2 eggs (separate the yolks from the white, yolks in one bowl & whites in another bowl)

Step 1
Heat a lightly oiled griddle or frying pan over medium high heat.

Bowl 1 --- Sift flour, baking powder, baking soda, sugar and salt in one bowl and set aside.

Bowl 2 --- In a second bowl, combine buttermilk and melted butter and stir together with a fork. Add egg yolks one at a time, again stir with fork till mixed. Next add a dash of vanilla extract and stir until well mixed.

Pour the dry ingredients (bowl one) into wet ingredients (bowl 2). Mix again with the fork. A lumpy batter is a good batter ... don't try to get rid of the lumps. Set aside.

Step 5
In a third bowl, beat egg whites that have been set aside, with an electric mixer. Beat for 2 minutes on high speed or until they form peaks with tips that stand straight when the beaters are lifted.
Fold the egg whites into the lumpy batter. -
Step 6
I like to use a 1/4 cup measuring cup to ladle batter onto a greased hot griddle ... this helps to keep the size of pancakes consistent.

Step 7
Watch your pancakes. Once you see bubbles form on the top of the pancake ... it is time to flip the pancake over. Cook the other side for another few minutes. Serve with butter and syrup .... Enjoy!!!
