Things You'll Need:
- Heavy Duty Foil.
- 4 [1 LB.] small boneless, skinless, chicken breasts halves.
- 4 tsp. of taco seasoning mix.
- ½ LB. of red potatoes, and thinly sliced. [about 2 cups]
- ½ cup of salsa.
- ¾ cups of four cheese Mexican style cheese.
- ¼ cup of sour cream

Step 1
PREHEAT the oven to 400 degrees Fahrenheit. Sprinkle the chicken with the taco seasoning mix. Then, place ½ cup of the potatoes on the center of 4 large sheets of heavy duty foil; and top evenly with chicken, salsa and cheese.

BRING up the foil sides. Double fold the top and both ends to seal each packet, so it’ll leave some air circulation inside. Place in a 15x10x1 -inch baking pan.

BAKE 30 to 35 minutes, or until the chicken is cooked through [165 degrees Fahrenheit]. Remove the packets from the oven, and let them cool for about 5 minutes. Cut some slits on the foil to release the steam before opening. Serve with sour cream.
