This dish, “Taco Chicken” is one of my personal favorites, and if you’re a fan of tacos and chicken, I think you’ll enjoy this lovely dinner!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Heavy Duty Foil.
  • 4 [1 LB.] small boneless, skinless, chicken breasts halves.
  • 4 tsp. of taco seasoning mix.
  • ½ LB. of red potatoes, and thinly sliced. [about 2 cups]
  • ½ cup of salsa.
  • ¾ cups of four cheese Mexican style cheese.
  • ¼ cup of sour cream
  1. Step 1

PREHEAT the oven to 400 degrees Fahrenheit. Sprinkle the chicken with the taco seasoning mix. Then, place ½ cup of the potatoes on the center of 4 large sheets of heavy duty foil; and top evenly with chicken, salsa and cheese.

  2. Step 2

BRING up the foil sides. Double fold the top and both ends to seal each packet, so it’ll leave some air circulation inside. Place in a 15x10x1 -inch baking pan.

  3. Step 3

BAKE 30 to 35 minutes, or until the chicken is cooked through [165 degrees Fahrenheit]. Remove the packets from the oven, and let them cool for about 5 minutes. Cut some slits on the foil to release the steam before opening. Serve with sour cream.

This dinner is amazing delicious. Hope you enjoy it!

Tips & Warnings
  • Makes 4 servings, 1 packet each.
  • Prevent the potatoes from sticking to the foil; spray the foil with cooking spray or use non-stick foil.
